We slow cure our lamb deboned lamb leg using a traditional curing broth inspired by my grandma, then double wood smoke over a hickory fire. The result, a delicate salty, sweet smokey lamb ham. Better than pork replacement to any sandwich or charcuturie platter. Winner of the Bronze Medal Australian Food Awards 2019 – Ham category.
